This is to ensure the eased movement of customers and the serving staff, inside the dining space. A welcoming interiors and well circulated space planning which allows the customers to enter the restaurant and be seated in a very convenient way.

Some factors that need to be considered are the size of the place, what kind of cuisine you have, how you want the interior to look aesthetically and, of course, sustainability. Here are some tips and guidelines to help you maximize your restaurant floor plan space to make the business more profitable.

Basic Space Planning

In primary room planning, the thumb rule for deciding the allocated area is that the dining area should consist of most of the total area and the remaining space should be used by the kitchen, storage and preparation area. Such measurements must be modified if you intend to add a waiting area or a café or bar or toilets, but the percentage of this extra space has to be taken as a part of the total area.

Dining seating: 60% of Total Area

Kitchen and storage: 40% of Total Area

Your seating plan will depend on what kind of restaurant you are planning to open. It’s important to remember that banquet seating can use as  little as one square meter per person, whereas fine dining may need 2 square meter per person It is normal for most restaurants or coffee shops with a general menu require an average of 1.5 square meter per person. This calculation includes the movement space, aisle traffic, serving stations, POS etc.

For an idea: Restaurant floor with 100 square meters

  • 40 seats
  • ‏ 60% Dining Area =  60 square meter
  • ‏ 40% Kitchen =  40 square meter

If you are purchasing an existing restaurant or leasing a commercial restaurant and you are planning to renovate or remodel the building, the same 
thumb rule still applies to 60% of the dining area and 40% to the kitchen, storage and Prep.

Assuming the space has available 100 square meters. The dining area is expected to be about 60 square meters, which would hold 40 seats. The kitchen and storage room will amount to 40 square meters. The floor plan specifics and the proportion of square meters to be allocated to the kitchen and dining area depends on the proposals of the owner and how they can be integrated into the floor plan.

The square meter area allocated to each patron depends on what type of restaurant you intend to have, depending on whether or not you have a fine restaurant,  full service restaurant, counter service, fast food restaurant, hotel / club or banquet hall.

The following area indicator per  person is minimum while considering seating area
Fine Dining Cuisine: 1.75 M2
Full-Fledge Restaurant: 5 M2
Counter Service only: 75 M2
Fast Food: 1 M2
Dining for hotels and clubs:  75 M2
Banquet: 1 M2

For safety reasons and to allow the free flow of traffic for diners and servers, the traffic path between the occupied chairs should be at least 80 cm wide and you should leave at least 1.2 meters per table including chair space. This enables the free flow of servers between stations and the kitchen and allows guests to move around in enough comfort. For safety reasons, it is very important that there is considerable space for the guest and staff to move around, and that the aisles are clear, particularly in the event of a fire.

When designing your floor plans, the wait stations should also be considered and defined. One small station should take 1.5 to 3 square meters, enough to accommodate 20 people. For larger stations, anything from 2.5 to 4 square meters should be a large central stop. For 60 diners, that would be enough.

You can require 50 to 75 cm per person for standing room only to decide the length of the bar in your restaurant. If you want to sit at the bar, 60 cm between the bar stools should be considered.

  • Bar Stool Height: 73cm
